I've wondered why no one has written a review about about the grill, but at $160 it is a pricey item with lots of more frugal alternatives. Well, I finally did get this, but...may the Amazon gods forgive me...I got it on eBay for a lot less.
First and foremost, this grill cooks very well. It heats quickly and evenly...even to the far edges of the pan...and at 11x21 inches it holds a lot of food. Also, the raised rim reduces spatter, one of the major problems with the reversible grill/griddles on the market.
Calphalon does over sell the non-stick properties of the pan. It is not non-stick, it is stick resistant though somewhat more so than original anodized aluminum Calphalon surface. The two cook and release food about the same, but the Calphalon One surface is easier to clean. In fact, this pan cleans with just a soak in soapy water.
In addition to grilling, this pan can be used for broiling as well. Unlike a Teflon-based pan, the Calphalon One surface can take full broiler heat and its easier to clean than a traditional two-part pan.
Also, like most aluminum pans this can be used for quick thawing frozen foods. Just place the food on the surface and the aluminum's heat conducting properties will thaw it in about two or three hours. This is not recommended by the FDA, but it does work.
So, is this pan worth its retail price tag? Probably not; there are plenty of less expensive and more-or-less equally effective solutions from coated and un-coated cast iron (Le Creuset and Lodge) to hi-tech surfaces like titanium and diamond ceramic (Scanpan and Swiss Diamond). Is it a good pan that provides professional results and authentic grilled flavor? Definitely, especially if you are already a Calphalon fan like myself.
