This handsome grilling pan, measuring approximately nine inches square, is made of heavy cast iron with a chrome handle. The handle rotates up and outward for use during cooking, then folds in flat for compact storage. Ridges in the pan are pronounced to lift meat, fish, and vegetables above any grease that collects, resulting in healthier eating. And, the ridges leave the charred stripes reminiscent of a real outdoor grill. The pan may be used under a broiler or on any type of stovetop, and two pour spouts make it adaptable for a left- or right-handed cook.

Before first use, the pan should be seasoned over medium heat with an application of vegetable oil. After that, all grilling with the pan requires only medium heat, thanks to the excellent heat retention properties of cast iron. To prevent rusting and to build up a natural nonstick patina, the grill pan should be washed by hand and dried immediately. --Ann Bieri

Overall I'm quite happy with this, and have been using it regularly for several weeks now.

I had been looking for a decent grill pan for a while. I wanted cast iron instead of teflon since there are times that I really want to crank up the heat. On an episode of "Good Eats", Alton Brown used a nice compact grill with a folding/removeable handle that I thought looked like just the ticket, but at $64 (Staub Cast-Iron 9-Inch Square Grill) that seemed just a tad too "special" for me, especially if I wasn't quite sure if this would really be what I needed. Thankfully I found the Typhoon, and it appeared to be essentially the same thing, at a much cheaper price. Two differences however... The handle on the Typhoon isn't removeable, so if you want to put this in the oven be prepared to have a good hotpad available, and even on the stovetop when you crank things up it gets a bit hot. Secondly it doesn't have a nice/elegant enamel bottom covering like that Staub.
