Amazon.com Review The French manufacturer Sitram, a world-renowned name in commercial cookware, developed a high-tech alloy called Cybernox to provide permanent, indestructible stick resistance for pans. Though not quite as stick-resistant as nonstick coatings found in other cookware, Cybernox outperforms coatings over a pan's lifetime because it's part of the pan itself and won't scratch (it's safe for metal utensils), peel, blister, or otherwise wear out. It also resists temperatures of 1,800 degrees F or more, making it safe in ovens and under broilers. On Cybernox pan bottoms, an aluminum disk sheathed in steel conducts heat rapidly and uniformly. This heavy, 18/10 stainless-steel, mirror-finish, 10.2-inch fry pan has a concave, heat-resistant, welded handle that is notched to hang on a hook or a peg. With no inside handle rivets to clean around, the pan scrubs up hygienically, and it's dishwasher-safe. Cybernox cookware carries a lifetime warranty against defects. --Fred Brack

I have this frying pan along with others models (all cybernox model) for a couple year now. Before, I'd been searching, trying, and buying many different brands. The non-stick and easy to clean of cybernox are simple the best combination of enjoyment of cooking. But you need to know how to cook with this pan. You shouldn't use too much flame, just use enough to cover a stainless steel bottom. As instructed, pre-heat it for 2 minutes, and you're ready to go. The heat is distributed nicely for cook any kind of food. The only time you use that much flame is to cook chinese cuisine, but again just pre-heat a bit longer and you're ready to go.

Cybernox is a terrific cooking surface, but it's not as slippery as Teflon. Despite its relative stickiness, it has a lot going for it. Clean-up is a breeze. It comes with a little stainless steel scourer that makes quick work out any residue without much elbow grease. It can go in a very hot oven and even under the broiler without fear and it goes in the dishwasher. Another advantage is that, unlike Teflon, it allows you to develop a fond, the darkened bits left on a pan that, when dissolved, add a lot of flavor to sauces.
The downside has more to do with the construction of the pan than its Cybernox interior. It has a stainless-clad aluminum disk on the bottom that isn't quite large enough. So you have to use a smallish flame on a gas stove to prevent scorching in the corners. In my opinion, the ideal pan would fuse Cybernox on to an All-Clad-type pan with an aluminum core that covers the whole base and goes up the sides.

This pan really is as good as non-stick but better since it will not scratch. I cooked scambled eggs and sunny side up eggs and was really amazed. There is a little bit of sticking but less or equal to the amount that I get using a non-stick pan. The mirror like surface in the inside of the pan is interesting looking. Although it is more expensive than many non-stick pans, it will probably cost the same or less in the long run since I periodically have to throw out non-stick pans when they get worn out or scratched.

After recent media buzz about Teflon , I wanted to find a fry pan that would be Teflon-free and also have non stick properties. This pan is terrific - it is all it's manufacturer claims - stick resistant and browns foods beautifully.
