Amazon.com Review With aluminum cores enclosed by stainless-steel layers, Calphalon's Tri-Ply pots and pans deliver the attributes of both metals. The aluminum cores conduct heat quickly and uniformly across the pots and pans' bottoms and all the way up their sides. The durable, 18/10 stainless-steel interiors and exteriors are easy to clean, resist scratching, denting, warping, and corrosion, and are nonreactive to acidic food. This 12-inch everyday pan has a domed, glass lid so cooking can be monitored without releasing heat. The lid is oven-safe to 450 degrees F, ensuring the pan not only can be used atop the stove for sautEing, stir-frying, and preparing one-dish meals but can go into the oven for braising and even baking. Handles stay cool on the stovetop. The pan's rim is flared to facilitate dripless pouring. Tri-Ply cookware is polished to mirror-finish outside for beauty and wears a satin-finish inside to conceal inevitable utensil marks. It goes safely into the dishwasher, although hand washing better preserves the mirror-finish, and carries a lifetime warranty against defects. --Fred Brack
Product Description If you are drawn to the beauty of stainless steel, yet are reluctant to sacrifice the cooking efficiency of aluminum, you can now have the very best of both worlds. Triply gives you a mirror polish stainless steel exterior, a heavy gauge conductive aluminum filling, and a stainless steel interior which won't react with foods. The disk is then formed into a pan shape, with walls and bottom of equal thickness, which allows heat to be conducted evenly. Stay cool handles feature an ergonomic design and secure attachment. The versatile size and shape of this pan means you'll use it, well, just about every day.

great June 15, 2008 I recently moved into a new rental with a glass top electric stove. Unfortunately my cheap old stainless pots and pans, which have served me well, are slightly warped these days. It's enough that the pans don't heat evenly on the flat glass top. So, I thought it was time to buy some real cookware.
This heats very evenly, and rather quickly as well. I find generally I have to use a lower temperature setting than I'm used too. The size is perfect, and I like that there's side handles instead of long handles. The slopped bottom keeps things from getting caught up in the corners, and the drip edge on the rim works well.
My only criticism is that the riveted handles, while probably more durable than bonding them to the outside, do leave rivet heads on the inside which I'd prefer to not be there.
Absolutely love it! April 21, 2008 I recently purchased the Calphalon Tri-Ply 12 in Everyday Pan and absolutely love it! I have used it to cook everything from eggs to liver and onions. It worked great and the clean up was easy. I went out and also bought 2 other Calphalon Tri-Ply pans.
Never makes it back to the cabinet! March 2, 2008 1 out of 1 found this review helpful
Since buying this pan about a month ago, I think I've put it in the cabinet exactly once. It's either on the stove or in the sink getting cleaned for the next time. Although I have a large collection of non-stick pans, I'm always finding myself looking for something new to cook in this one. Non-stick pans simply can't compare, especially when it comes to searing meats (mmm steak) and creating sauces and gravies from the great stuff that sticks to the bottom of it. If you're having to clean that stuff up afterwards then you're missing the best part of using this pan!
OK, maybe I'm being judgmental, but even if you don't do anything with the "fond" that's on the bottom of the pan, cleanup isn't that hard if you use the right products and methods. You can put some water into it, heat it up and scrape much of the residue off. The rest can be gotten off fairly quickly with an abrasive sponge and "Barkeepers Friend" (the powder not the liquid). One of those little square nylon pan scrapers come in handy too. Yeah it still take a little elbow grease, but from a guy who hates to do dishes and had always dealt with non-stick pans, I'm finding the benefits of this pan far outweigh the problems.
The only thing I don't like is the little handles. They get too hot to touch so moving the pan around requires pot holders. I would have opted for the 12 inch pan with the long handle, but when you consider that it doesn't come with a lid, the price difference comes out to fifty bucks, and I just couldn't justify that.
I love this pan!!!!! February 8, 2008 2 out of 2 found this review helpful
I just love this pan. I am just starting to collect the Calphalon Triply set, and did so after a lot of research. I am trying to get away from the teflon pans because of the health hazard, and started looking into stainless even though I was afraid that food sticking would be a problem. I decided to try the stainless because I have a good set of stainless stock pots that I have been very happy with. I decided on the Triply because of so many good reviews, the good weight, and the fact that the aluminum and stainless layering was on the sides as well as the bottom. I also like the glass top to view contents. When I got this pan, I also saw that there is a seal on the cover to hold in moisture. I followed the instructions to wash in hot soapy water before used, and also to coat the inside with oil just before use and before heating. Then I preheated the pan on a medium heat before putting the food in. The first dish included a number of ingredients (onions, meat, peppers, mushrooms) and then a sauce. Everything cooked wonderfully with no sticking. Cleanup needed only soap, water, and a dish cloth, and the pan looked like new. I have ordered a few more for this set and will review them as I use them. I expect that this will be the last set I ever have to buy.
Works, but could be better January 8, 2008 1 out of 1 found this review helpful
I'm used to nonstick, so cleaning will never be as easy as it once was. That said, this does clean up pretty well in the dishwasher, and if it doesn't, some Barkeepers Friend, presoaking, and a sponge do the trick. One disappointment is that the rivets to the handles aren't stainless, so they discolored very quickly. Not ugly, but I expect better from Calphalon.
