As part of the Advanced Collection, these kitchen shears feature blades forged from high-quality German carbon steel that resists rust and food stains. Serrations on the lower blade along with a curved blade design hold food in place, making these shears ideal for cutting poultry. The shears are indispensable for an infinite number of other uses as well, such as cutting parchment paper to wrap fish en papillote, snipping the tips off of green beans, or clipping pieces of trussing string for tying poultry. The shears have a full tang and counter balance cap to provide superior balance. Ergonomically-shaped handles with cushioned non-slip Santoprene padding offer a secure, comfortable grip--even when cutting with wet hands. These shears have a nice heft and, have a thick appearance. They also cut through chicken carcasses easily. It's also not difficult to take them apart for cleaning and, are just as easily put back together. Just reconnect them at the junction and, put the spring back into the corresponding hole. It connects permanently to the other shear.
The handles are covered with a soft rubber like substance which helps guard against your hand slipping while you cut.

I would recommend them to anyone needing a pair of poultry shears.

I bought these elsewhere and was impressed. Extremely sturdy and durable, they can clip through chicken bones and I plan to use them in the garden for clipping roots etc. I had the older version of Cutco kitchen shears, which I loved but I lost them. But the Cutco were like scissors and were not a tool of choice for cutting up chicken or the tough stuff. So I recommend giving these a try. They are rather heavy, however, so if if you have hand weakness or dexterity problems they are probably not for you.
