Circulon Infinite is great for induction cooking! October 10, 2008 I got this pan when I got my Circulon Infinite Induction Cooker. The conductivity of the aluminum with the induction capability of the stainless disk make a great cook pan! I deep fry, stir fry, saute before braising, braise, boil for pasta, etc., etc., etc! Clean up is a snap! It quickly became my favorite cook pan because I don't have the "hot spot" problem with it that I have with some other pans using and induction burner. I use primarily All-Clad, but I now intend to buy other Circulon Infinite cookware. And guess what, I used to hate Circulon cookware!

I like to make my own sauces and stocks in large quantities then freeze them for later use. I have found that a "saucier" type of pot, that gets wider at the top, allows more water to evaporate and quickens the thickening process. Up till now I've used a 5.5 qt. stainless steel pot but it finally gave out and is no longer being made. I shopped around and read all the reviews for large sauciers like this Circulon. I've never used Circulon before so was uncertain if I'd like it, but the price was right and a 6-qt pot is exactly what I needed. Now that I've tested it, I'm glad to report that the pot works perfectly and I recommend it for the use I make of it.
The pot is indeed rather heavy. On the plus side that gives it very good footing on my electric stove, and allows the element to work very efficiently, so I can put the pot on the small elements to reduce my sauces and stocks rather nicely.
Fit and finish is excellent. Neither handle gets very hot and I've drained the pot several times without potholders.
Note on the "non-stick." There is no lining in the pot. It is anodized aluminum and the rings in the bottom prevent sticking. I've had not problems with the system, but not being familiar with Circulon I was expecting some sort of teflon-like coating. Learn something new every day!

This is an incredible pan and I love it. I can't believe I've had to wait this long to get a pan that doesn't have sticking problems and is a cinch to clean. Thanks a million!

This pan is a big improvement over the original Circulon pot I have with the deep circular grooves. This pan has shallow bumps on the pan bottom that are extremely easy to clean. This particular chefs pan is a great size for meals for 4. I love the high straight sides. The pan is heavy for me so I cannot easily lift it or toss ingredients using one hand. The heaviness is the biggest negative for me over the wok I had that this replaces. The reason for the weight is a layer of stainless steel on the bottom of the pan, which is very flat. The lid is also stainless steel and tight fitting. I cook over a budget electric range and the pan is reasonably even heating. I have not noticed the handle getting hot at all, but I have not used very high heat on this pan because it so far does not seem to need it. The non-stick performance has been great, and the pan cleans up very easily. I always hand wash and have not tried in the dishwasher. The pan with the handle seems a little big to fit efficiently in a dishwasher. I like this pan so much that I am going to buy more of the Circulon Infinite cookware.
