Editorial Reviews:

Product Description
Originally designed to meet the demands of professional chefs, All-Clad continues to be the undisputed choice in four-star kitchens throughout the world. The cookware has exquisite lines, impeccable balance, meticulous hand-finishing, and superior heat-conductivity. The cookware features a unique metal bonding construction in which a thick core of aluminum is sandwiched between an easy-to-clean, highly polished 18/10 stainless steel cooking surface and a brushed aluminum alloy exterior. The aluminum core retains heat and evenly distributes it along the bottom and up the sidewalls of the cookware, eliminating hot spots when cooking. The stainless interior is stick-resistant and cleans easily. The matte finish exterior of brushed aluminum gives the cookware a distinctive style. The saucier is the ideal pot for preparing tomato sauce or risotto. The wide, gently sloped sides help to cook off excess liquid, while the sauce pan-like depth ensures that sauces won't dry out too quickly. Slightly rounded corners on the bottom of the saucier make it easy to whisk sauces, soups, and pastry cream and to stir risotto. The saucier has a long, stay-cool handle attached with non-corrosive, stainless steel rivets and a lid fashioned from polished 18/10 stainless steel that fits even with the pan's edges to seal in the flavour of foods.
5 quart/5.2 litre capacity.
Oven safe to 500 F. Lifetime warranty. Hand washing with warm, soapy water is recommended, as the exterior beauty of the pan will deteriorate with dishwasher use. To remove stuck-on food or discolouration and stains resulting from using too high heat, clean using Bar Keeper's Friend stainless steel cleanser. Do not use scouring pads, steel wool, abrasive cleansers, bleach, or oven cleaners.

Amazon.com Review
The second generation of All-Clad's Master Chef line (MC2), this cookware combines brushed aluminum with stainless-steel accents for a contemporary look. Like All-Clad's other renowned cookware collections, Master Chef provides serious and professional cooks with all the virtues that make All-Clad's worldwide reputation unsurpassed. Key to its high performance is a three-ply, bonded construction. Sandwiched between the exterior and an 18/10 stainless-steel interior lies a thick core of pure aluminum that spreads heat evenly across the bottoms of pots and pans and all the way up the sides. The interior is highly polished so it's stick- as well as corrosion-resistant. Handles, rivets, and tight-fitting lids are all gleaming stainless steel.

This classic, versatile 5-1/2-quart saucier pan has rounded sides, which increase the amount of food it can hold relative to the diameter of its bottom. Because the aluminum core extends up the sides, foods cook uniformly in the pan, even though it's 4-1/2 inches deep. And because the interior is nonreactive, tomato-based sauces and other acidic foods won't taste metallic. Its polished 18/10 stainless-steel pan and lid handles are riveted for strength and grooved on the top for comfort. Like the helper handle, the pan's long handle (holed for hanging on a hook or peg) stays cool on the stovetop but won't be harmed by an oven's highest heat. Master Chef cookware carries a lifetime warranty against defects and should be hand washed. --Fred Brack

5 out of 5 stars High performance pan for risottos, roux, and sauces.   February 10, 2008

The gently sloped sides of All Clad's 2-Quart Saucier exactly match the curve of All Clad's stainless balloon whisk (and many other balloon whisks for that matter). This gentle curve, combined with the very smooth tough stainless steel interior make this a great surface for frequent stirring. All Clad's incredible heat transmissive properties allow you to deftly adjust temperature - a must for delicate sauces, roux, and risotto. Of course this pan can be used as a general purpose sauce pan as well. The 2 quart size is just the right size too.

As for the MC2 finish - it's fine. It gets stained - but the soft matte surface is easily cleaned with a paste of cleanser (like Ajax or Comet) on a scrubby. Just rub the paste in a circular motion and power away the stains. You can use BarKeeper's Friend too - but plain cleanser works fine. I do this one every couple of months. All in all it's about the same to care for as anodized aluminum (and about as good as any other cookware except nonstick - but this is vastly more durable). Highly recommended.

3 out of 5 stars Pro looks-amateur finish   May 12, 2006

having an assortment of All-Clad pieces, I couldn't pass up the rare All-Clad MC2 sale.

Like the rest of the line, the MC2 has a stainless steel interior. The difference is in the brushed aluminum exterior. That's where the problem lies. Apparently this finish is a tad more porous than the LTD line. I keep getting 'stains' that require the Barkeeper's Friend. No big deal-but for a pan of this price, easy maintenence should be mandatory.

Wait for the LTD sale instead.

4 out of 5 stars Heats very evenly, but has a few design flaws   May 11, 2006
3 out of 3 found this review helpful

This little pan heats uniformly. I use it for making oatmeal, reheating meals since I don't have a microwave, toasting seeds, and making sauces. It cleans up beautifully just with soap and water. I did accidentally put it through the microwave once, however (not recommended by the manufacturer), and the pretty finish is now somewhat dulled.

On the negative side, for reheating I find a lid helpful, but since this pan didn't come with a lid I use one from a different pan. This pan also has a few design flaws:

1) There is no lip, so pouring is quite messy.
2) The handle is heavy, and when the pan is not full it tips easily.
3) The sides are somewhat low, as another reviewer mentioned. I think this pan would work better as a 1.5 quart pan.

3 out of 5 stars Great Small Pan, but Very Unbalanced-- Tips easily   March 31, 2005

We've been very happy with this pan except for one problem:
I don't know if the handle is too long and heavy or the base is too small, but this pan has trouble balancing and tips over fairly easily.

3 out of 5 stars Angle of handle is all WRONG on this pot . . .   June 8, 2003

For some reason, AllClad set the angle of the handle much shallower than on their other pots and pans--the angle is similar to a fry pan. When you lift the pan off the stove, the rim of the pan does not remain level. This is especially annoying if you are working with this pan alongside several pots. A minor detail perhaps. Otherwise, an excellent pan, great for cooking rice and reducing sauces.
