For the best crust . . . September 6, 2008 this is the best pie dish. Forget pyrex and metal. I make an all-butter crust and bake it on the bottom rack of the oven and it comes out perfect every time. I think it's the heavy mass of the ceramic that does it. I've only made 2-crust fruit pies in it thus far, but I expect it will be as good for single-crust pecan, pumpkin, etc., pies.
Perfection July 26, 2008 You will NOT be disappointed in any EMILE HENRY baking products. This beautiful bakeware is amazing and worth every penny. My cheese and veggie quiche turns out perfect every time and never sticks! My not-so-secret to a perfect crustless quiche? (shhhh, a bit of bisquick/or homemade biscuit mix and buttermilk mixed with eggs for the bottom)! Really! It's so good.:) I use the 12-inch dish because I usually bake for a crowd but the 9 inch dish is perfect for your usual holiday pies and whatnot.
These pie dishes clean-up easily with a 5 minute soak in the sink and voila...good as new! I've baked some carmelly, gooey pecan pies in them and they truly stand up to the task and have a natural non-stick quality which can't be beat.
-All I can further say is...GO FOR IT! Investing in GOOD QUALITY bakeware is so worth it and if you take good care of these ceramic wonders, you can actually pass 'em down to your grand-chillens.
Exquisite June 30, 2008 Initially I added this to my Wish List because I thought it was beautiful. I was fortunate enough before I bought this to come across an 8 inch version of it in red at a Williams-Sonoma outlet for $10. Knowing how expensive this one was, I had to pick it up. I was immediately thrilled with the quality that I pulled out of the oven with the first pie I baked in it. After seeing just how lovely and functional Emile Henry bakeware is, I came back to Amazon and bought the larger pie dish in white.
The quality is stunning and I can't say enough about how beautiful it is. The addage is true that you get what you pay for, and in the case of Emile Henry it is a tradition of craftsmanship. Somehow the form and function of this pie dish just seems to make already good pies taste so much better.

I purchased one dish for Thanksgiving for myself and one for Christmas for my daughter-in-law! It is, as was described, a wonderful pie dish. The pie came out perfect and the dish was very easy to clean.

Pies are perfect-Clean up is amazing!!! The cookware is absolutely beautiful. There are few things I pay good money for and even fewer things I end up not regretting.. This is one Pie dish you will never regret owning!. It's wonderful and still looks as bright and perfect as the day i took it out of the box.. I throw it in my dishwasher without pre rinsing too! And comes out looking as though I just brought it home.. I Make the best Apple Pies I ever ate..the crust is perfect every time. It would be nice to thank the man responsible for such a nice tool as this.
